You know when i came to Bombay One of the most amazing dishes That i found was the “Pav Bhaji” So you basically take all the vegetables And extract all of its flavor and nourishment That is then brought together And served with a “Pav” [Dinner Rolls] Just how Bombay likes it It is impossible to make Pav Bhaji without butter For now, Lets focus on our Bhaji Capsicum is a must Green Peas Salt And minimum amount of water So the idea is to make it like a porridge So here is my fashionable pressure cooker On the other side Till our vegetables are being cooked And the pressure being built Till then Lets focus on the taste And for the taste Only three things matter Butter Butter And Butter And Butter A very small amount of cumin Now The onions Onion 2 whistles more Tomatoes When we are cooking this in a pot You know we let in be On a griddle You are always stirring it You are always moving it Right Butter Butter And butter Now the potatoes Potatoes work as B&B Body & Binding So our vegetables are almost mashed Our masala looks ready aswell Water Very Important At this stage add water bit by bit and cook the masala Always remember What the street vendors do That is to splash water on the griddle and then cook the masala The texture is really important Our onions are still quiet juicy You know some people add turmeric and some do not I belong to the category that a little is a must or more than a little Butter Butter Butter Now the Pav Bhaji Masala Or technically Bhaji masala Should be Added half during cooking and half after And more Pav Bhaji Masala Remember half before and half after More Butter A little bit of salt As the butter has salt Beautiful So my lunch is ready I have given it a Punjabi touch with an ample amount of fresh coriander Smells so good Now its time for our Pav [Dinner Rolls] Butter A wedge of lemon Onions And Butter

  10. Besides cooking it would be great if you go to the deeper level of right utensils, oils etc. I see a non stick pan. Generic oil being stated.
    Do oil and butter go together?

  16. quick tip: add pasta sauce (tomato one) to get a tangy taste and red color. I always use it and it turns out well every time. 🙂
